Distillation is an ancient technique, probably of Mesopotamian origin, developed by the Egyptians and improved in the Middle Ages by the Arabs.
It exploits the second principle by which the greater part of the fragrant molecules contained in a flower or resin, can be transported by vapour. In a boiler (still) the substances are mixed with a quantity of water equal to five times their weight. The mixture is brought to boiling point and the vapour passes through the fragrant substances loading itself with essential oils.
This "fragrant vapour" passes through a swan neck to a cooler (a long winding tube in a container of cold water) it condenses into a decanting vase. Due to the difference in density, the essential oil is separated from the water (the remaining perfumed water can also be used) and collected.
Today’s method integrates this procedure with a following phase called divided distillation, that eliminates different substances to increase the intensity and the persistence of the essences.
